We use a Samuchit charcoal based clean slow steam cooker to cook dals, vegetables and millets. Works on just a handful of charcoal. Set it and forget it. Food gets cooked in one hour. No smoke is emitted. The food remains warm for hours if not taken out.

Slow cooking is a cooking method that involves cooking food at a low temperature for a long time.

We started focusing on Slow Cooking ideas from 2018. We use various methods like soaking, fermenting, charcoal stoves, wood fire stove and hand tools to make sure that the food is cooked slowly so that it retains the nutrients.

Slow cooking offers a host of benefits:

Flavor Enhancement:

o Deepens Flavor: Long, slow cooking allows flavors to meld and intensify, creating incredibly rich and complex dishes.

o Tenderizes Tough Foods: Connective tissues in tougher foods like toor dal and millets break down, making them incredibly tender.

Convenience:

o "Set it and Forget it": Slow cookers allow for hands-off cooking. Simply add ingredients, set the timer, and come home to a delicious meal.

o Meal Prep: Perfect for meal prepping, allowing you to cook large batches in advance and enjoy them throughout the day.

Health Benefits:

o Retains Nutrients: Low and slow cooking helps retain more vitamins and minerals compared to high-heat methods.

o Gut health is restored with slow cooking.

Cost-Effectiveness:

o Zero cost: We prepare the charcoal from wood found in our garden. So, there is zero cost involved in our slow cooking! We use just 2 LPG cylinders in an year, apart from slow cooking (for quick cooking sometimes, tadaka or making other irregular recipes that cannot be done in the charcoal cooker)

o Reduces Food Waste: Allows us to cook large batches and use leftovers for subsequent meals.

Energy Efficiency:

o Lower Energy Consumption: Slow cookers use less energy than ovens, making them a more energy-efficient cooking method.

Overall, slow cooking is a versatile and rewarding method that offers a delicious and convenient way to prepare nutritious and flavorful meals.
