Gluten is a protein that is found in wheat in highest concentration. Gluten is not easily digested. Many people just cannot digest gluten at all. Almost all of India population cannot digest gluten. Wheat consumption has shot up tremendously. Wheat is used in making chapatti, bread, biscuits and bakery foods. Maida is refined wheat.
